Chef’s Secrets – Harrogate Blue Cheese Sauce

We want to let you in on one of our most delicious secrets – how we make our moreish Harrogate blue cheese sauce.

Packed with delicious Harrogate blue cheese, the sauce features an underlying flavour of garlic and shallots, while beef jus works behind the scenes to enhance the depth of flavour. Lemon juice lifts and brightens, bringing the flavours together and strengthening the delightful tanginess of the blue cheese.

This decadently rich blue cheese sauce is sure to warm the chilly autumn nights to come, when you’re craving something creamy, cheesy and just a little bit naughty!

The Ingredients

50g Butter
2tbsp Plain Flour
300ml Milk
100g Harrogate Blue Cheese
1 Garlic Clove
1/2 Banana Shallot
1tsp Lemon Juice
1tbsp Home Made Jus
Salt, to taste

Step 1

To begin, slowly melt your butter in a small saucepan over medium heat. Add finely chopped shallot with the garlic, and just a touch of salt. Leave this to sweat slowly until soft. Stir the flour in gently with a wooden spoon, to make a roux. Gradually add the milk while still stirring to create a thick sauce.

Step 2

Bring this to a simmer, adding in crumbled blue cheese. Add the lemon juice to cut through the richness of the sauce, followed by your jus to spike the sauce with just a hint of beefy flavour. Reduce the sauce down to your desired thickness, and then simply serve, relax and enjoy.
